Baked Apple-Blueberry Oatmeal Pudding

Dear Dinner Table Sisters,
So, I have loads of oatmeal and I have been trying different oatmeal recipes. I made my Baked Apple-Blueberry Oatmeal Pudding. For me a ‘foodgasm’! (Excuse my expression but that’s how delicious it is). Just had some for breakfast. I am making more for my weekend delivery to Montreal when I visit family. So healthy, too!

I immediately contacted her and asked her for the recipe. Needed to make a few modifications (I do not eat cow dairy and eliminated the almonds because of my son’s nut allergies).

Ingredients:

  • 1 ½ cups rolled oats
  • 2 cups whole fat plain yogurt or goat yogurt
  • 1 apple, chopped
  • ½ tsp ground cinnamon
  • ½ tsp baking powder
  • ½ tsp sea salt
  • ¼ cup slivered almonds (optional)
  • 2 cups whole milk or almond milk or coconut milk
  • ¼ cup maple syrup or honey (optional)
  • 1 tsp vanilla
  • 1 ½ cups fresh or frozen blueberries

Instructions:

1. In a large bowl, combine the oats and yogurt. Cover bowl with a towel and let stand overnight in the fridge.
2. Butter a 9×9 square baking dish. Place the chopped apples over the bottom of the dish and bake at 375 degrees for 30 minutes or until tender and slightly browned. Remove the dish from oven. Turn temperature down to 350 degrees.
3. In a separate bowl, combine the cinnamon, baking powder, sea salt and almonds (optional).
4. In another separate bowl, whisk together the milk, honey or maple syrup (optional), and vanilla. Whisk in the dry ingredients until all combined.
5. Pour the entire mixture into the oats and stir to combine.
6. Sprinkle half of the blueberries over the apples in the baking dish, and gently spoon in the oat mixture. Place the rest of the blueberries and almonds (optional) over the top, and bake uncovered for 50 minutes or until the top is browned. The cobbler should not be too liquid-y. Remove from oven and let stand for 10 minutes.

Blueberry Cobbler

Ingredients:

  • 2 1/4 c. flour
  • 1 1/4 c. sugar
  • 3/4 c. butter
  • 1 tsp. bkg soda
  • 1 c. plain low fat yogurt
  • 1 tsp. bkg powder
  • 2 eggs
  • 1 1/2 c. fresh blueberries
Instructions

1. Preheat oven to 375 F.
2. Mix flour, sugar and butter until fine crumbs are formed, should take about 15 seconds in food processor.
3. Remove 1 cup of the crumb mixture from processor bowl and set aside for the crumb-mixture topping,  leaving remaining crumbs in processor.
4. Dissolve baking soda in yogurt.
5. Add yogurt to processor bowl along with baking powder and eggs mixing until blended.
6. Pour batter into mixing bowl and stir in blueberries. (Do not mix blueberries in processor, blueberries should be mixed into batter by hand in separate bowl so that they do not get smashed).
7. Spread batter evenly in 9 x 9 square baking pan.
8. Sprinkle with reserved crumb-mixture.
9. Bake in preheated oven for 40 – 45 minutes, until done.
10. Delicious served warm or at room temperature.  May be frozen.

DT Tip: This Cobbler is great as a dessert, too. Serve warm with ice cream.

Kick Ass deLeshious Granola

I love nuts, I love anything with a crunch and I absolutely love granola.  I have tried every single type of store bought, organic, homemade, farmer made, Vermont made, angel made, you name it made, and rarely have I been impressed.  I usually find the granola to be mostly oats or filler with not much substance.  Or, I find them to be too sweet or not sweet enough.  As well, I find granola to be ridiculously expensive for what I am getting.  Over the years, I experimented in my kitchen lab, using my children and friends as my food critics.  We finally found the “Motherload” of Granola which I call my Kick Ass deLeshious Granola.

Ingredients

  • 3 cup large oats
  • ¼ Vanilla cup protein powder
  • 1 cup 10 grains mix or wheat germ (optional)
  • 2 cups dried fruit: i.e. chopped apricots, dates, figs
  • ½ cup chopped almonds
  • ½ cup chopped pecans
  • ¼ cup raw sunflower seeds
  • ¼ cup raw pumpkin seeds
  • 1/3 cup of shredded unsweetened coconut
  • 1 tsp cinnamon
  • ½ cup Agave or Maple Syrup (I usually use Agave)
  • ½ cup canola oil
  • Optional: 1/2 cup dark chocolate chips or shredded dark chocolate

Directions

Preheat oven to 325

1. Combine dry ingredients
2. Combine wet ingredients in separate bowl
3. Add wet ingredients to dry and mix.
4. Spread on a shallow baking pan with parchment paper and bake for 22-25 minutes mixing every 10 minutes.

DT Tip: 1/2 cup dark chocolate chips or shredded dark chocolate

Add *cranberries and **chocolate after baking when granola is still hot and out of the oven.  **Chocolate will melt in with granola.  If you bake the *cranberries with the batch, they will get too hard.  So add them at the end while granola is cooling down.

Taub deLeshious Granola

Genia is one of my  biggest fans (mutual admiration) and food critic.  She went crazy excited over my granola but, unfortunately, could not have them in her house due to one of her sons having a nut allergy.  Back to the kitchen lab I went and it did not take long for me to revise my granola to the Taub deLeshious Granola.  A total hit in the Taub household amongst many of their friends as well.

Ingredients

  • 3 cup large oats
  • ¼ Vanilla cup protein powder (I use Vanilla)
  • 1 cup 10 grains mix or wheat germ (optional)
  • 2 cups dried fruit: i.e. chopped apricots, dates, figs (whatever dried fruit you have, don’t use raisins unless you add them at the end like the *cranberries.)
  • 1/3 cup of shredded unsweetened coconut
  • 1 tsp cinnamon
  • ½ cup Agave or Maple Syrup (I usually use Agave)
  • ½ cup canola oil
  • **1/2 cup chocolate chips or shredded chocolate (I usually use dark chocolate)
