(Mmm… chilled summer delight)
Mango grows in tropical climates and is available to us during out summer season.
Yahoo! Mangoes are a savory juicy fruit that just quenches our thirst on a hot summer day. Enjoy this delicious chilled soup under 7 ingredients. It’s that easy!
1 tbsp fresh ginger root minced (optional)
1 cup chopped red onion
2 tsp olive oil
2 cups orange juice
2 cups mango fruit (frozen or fresh)
2 tbsp maple syrup
Pinch of sea salt
- In a pan, sauté minced ginger and onion until the onion is translucent or soft – on a low temperature for five minutes.
- Combine all the ingredients including the ginger and onion in a blender. Puree until smooth.
- Cover the soup in the fridge until it chills.
Serves 5 or 6 portions
Top your soup with a beautiful design using sour cream. That’s it! I use a simple bottle with a tiny spout. Fill the bottle with sour cream, and in your own creative way squeeze out some sour cream to form a décor on your soup right after you pour the soup in individual bowls or cups. Serve! It’s a wow in taste and presentation!
